Ingredients Needed
- 12 quail eggs
- 12 shortcrust pastry tartlets (store-bought or homemade)
- 2 chorizos, finely chopped
- 1/2 onion, finely chopped
- 1 clove of garlic, minced
- 1 splash of milk
- Grated cheese (your choice)
- Oregano (optional)
- Olive oil
- Salt
Steps to Follow
Preparation:
- Tartlet Base:
- If using store-bought tartlets, arrange them on a baking tray.
- For a personal touch, you can make your own shortcrust pastry tartlets.
- Prepare the Filling:
- Finely chop the onion and garlic.
- Dice the chorizo into small pieces.
- Heat a bit of olive oil in a pan, then sauté the onion, garlic, and chorizo over medium heat for about 7 minutes, until softened and fragrant.
Assembly & Baking Options:
Option 1: Fried Egg Topping
- Fill the tartlets with the chorizo and onion mixture.
- Sprinkle grated cheese over the top.
- Bake at 200°C (392°F) for a few minutes until the cheese melts.
- While the tartlets bake, fry the quail eggs.
- Once the cheese has melted, remove the tartlets from the oven and top each with a fried quail egg.
Option 2: Scrambled Egg Filling
- Beat the quail eggs in a bowl and add a splash of milk and a pinch of salt.
- Once the chorizo and onion mixture has softened, pour the eggs into the pan.
- Stir gently with a wooden spoon until the eggs are just set but still creamy.
- Spoon the scrambled egg mixture into the tartlets and sprinkle with grated cheese.
- Bake at 200°C (392°F) for 2-3 minutes to lightly melt the cheese.
