How to Prepare Whole Wheat Bread

Procedure to make 100% Whole Wheat Bread

Ingredients Needed

  • 500 g (4 cups) whole wheat flour
  • 300 ml (1 1/4 cups) water, at room temperature
  • 25 g (0.9 oz) fresh yeast, crumbled (or 8 g dry yeast)
  • 3 tablespoons of virgin olive oil
  • 1 tablespoon salt

Instructions

  1. Prepare the Dough:
    • Place the whole wheat flour on a clean counter or in a large mixing bowl. Add the salt and mix lightly.
    • Make a well in the center of the flour and pour in the room-temperature water, olive oil, and crumbled fresh yeast.
  2. Mix and Knead:
    • Combine the ingredients using your hands until a dough starts to form.
    • Knead the dough for about 8–10 minutes until it is smooth and elastic. You can dust the surface with a little flour if needed to prevent sticking.
  3. Let the Dough Rise:
    • Shape the dough into a ball and place it in a bowl. Cover it with a clean cotton cloth.
    • Let the dough rest in a warm place for about 1–2 hours or until it doubles in size.
  4. Shape the Bread:
    • Preheat the oven to 200°C (392°F).
    • Lightly flour your countertop and divide the dough into two equal parts (or more for smaller buns).
    • Shape the dough as desired—loaves, buns, or a single large loaf. Place the shaped dough on a baking tray lined with parchment paper.
  5. Score and Bake:
    • Use a sharp knife to make shallow cuts on the top of the dough to allow it to expand while baking.
    • Bake the bread at 200°C (392°F) for 20 minutes. Then reduce the temperature to 180°C (356°F) and bake for an additional 20–30 minutes, depending on the size of the loaves.
    • The bread is done when it has a golden crust and sounds hollow when tapped on the bottom.

Tips:

  • For a crispier crust, place a small bowl of water in the oven while baking.
  • Store the bread in an airtight container or bread bag to keep it fresh for several days.
