Ingredients
- 100 g (1/2 cup) chickpeas
- 1 carrot, grated
- 1 garlic clove, minced
- 1 tablespoon paprika (adjust to taste)
- Cheese of your choice (for filling)
The process of making Chickpea and Carrot Croquettes
- Soak and Cook the Chickpeas:
- Soak the chickpeas overnight in plenty of water.
- Drain and cook the chickpeas in boiling water until they soften (about 40β60 minutes). Drain and let cool.
- Prepare the Mixture:
- In a food processor or blender, pulse the cooked chickpeas, grated carrot, garlic, and paprika until you get a thick, smooth paste.
- Form the Croquettes:
- Take small portions of the mixture and shape them into balls or croquette shapes with your hands.
- Flatten each slightly, place a small piece of cheese in the center, and seal the mixture around the cheese.
- Bake:
- Preheat the oven to 180Β°C (356Β°F).
- Arrange the croquettes on a baking tray lined with parchment paper.
- Bake for about 20 minutes, turning them over in the last 5 minutes for even browning.
Serving Suggestions
- Serve warm with a dipping sauce like yogurt-garlic dip, tahini sauce, or ketchup.
