Ingredients

  • 100 g (1/2 cup) chickpeas
  • 1 carrot, grated
  • 1 garlic clove, minced
  • 1 tablespoon paprika (adjust to taste)
  • Cheese of your choice (for filling)

The process of making Chickpea and Carrot Croquettes

  1. Soak and Cook the Chickpeas:
    • Soak the chickpeas overnight in plenty of water.
    • Drain and cook the chickpeas in boiling water until they soften (about 40–60 minutes). Drain and let cool.
  2. Prepare the Mixture:
    • In a food processor or blender, pulse the cooked chickpeas, grated carrot, garlic, and paprika until you get a thick, smooth paste.
  3. Form the Croquettes:
    • Take small portions of the mixture and shape them into balls or croquette shapes with your hands.
    • Flatten each slightly, place a small piece of cheese in the center, and seal the mixture around the cheese.
  4. Bake:
    • Preheat the oven to 180Β°C (356Β°F).
    • Arrange the croquettes on a baking tray lined with parchment paper.
    • Bake for about 20 minutes, turning them over in the last 5 minutes for even browning.

Serving Suggestions

  • Serve warm with a dipping sauce like yogurt-garlic dip, tahini sauce, or ketchup.
  • These croquettes are perfect as a snack, appetizer, or light meal.
