- Use a blender or immersion mixer and a tall, narrow glass or container for best results.
- Combine the Base Ingredients:
- Crack the egg into the container.
- Add a pinch of salt and a small splash of your chosen oil.
- Start Blending:
- Place the mixer blade at the bottom of the container.
- Begin blending at low speed without moving the mixer for about 30 seconds to 1 minute. The mixture will start to emulsify.
- Gradually Add Oil:
- Once the base has thickened, slowly drizzle in more oil while continuing to blend.
- Move the mixer slightly up and down as the sauce thickens to ensure an even texture.
- Adjust the Flavor:
- When the mayonnaise reaches your desired thickness, add a splash of lemon juice and mix briefly to incorporate.
- Taste and adjust with more salt or lemon juice if needed.
