  • 125g flour
  • 25g butter
  • 1¼ cups water
  • 4 eggs
  • 150g grated cheese (Gruyère or your favorite)
  • Parsley (for garnish)
  • Salt (to taste)
  • Olive oil (for frying)

Instructions on how to prepare cheese fritters.

  1. Prepare the Dough:
    • In a pot, bring 1¼ cups of water to a boil, along with the butter and a pinch of salt.
    • Once it boils, add the flour all at once and stir vigorously with a wooden spoon until the dough pulls away from the sides of the pot, forming a smooth ball.
  2. Let the Dough Rest:
    • Remove the pot from the heat and let the dough cool for 5 minutes, stirring occasionally to prevent it from forming a skin.
  3. Add Eggs & Cheese:
    • After resting, beat in one egg at a time, making sure each egg is fully incorporated before adding the next.
    • Add the grated cheese of your choice (Gruyère is a great option), along with some chopped parsley for flavor.
    • Let the dough rest for at least 2 hours to allow the flavors to meld.
  4. Fry the Fritters:
    • Heat a large, deep frying pan with plenty of olive oil over medium heat. The oil should be warm, not hot, to prevent the fritters from burning.
    • Carefully drop spoonfuls of dough into the oil, making sure they don’t stick together. Fry until golden brown and crispy on all sides, about 3-5 minutes.
  5. Drain & Serve:
    • Use a slotted spoon to remove the fritters from the oil and drain them on a plate lined with absorbent paper.
    • Serve them hot in a bowl, with a side of tomato sauce for dipping if desired.

Tips:

  • Make sure to keep the oil at the right temperature to avoid soggy fritters. You can test the oil with a small piece of dough—if it sizzles immediately, it’s ready.
  • You can experiment with different cheeses or add herbs like thyme for variation.
