The cake was topped with chocolate mousse and biscuits.

The ingredients needed.

  • 250g sugar
  • 250g butter (leave at room temperature for 12 hours)
  • 1 tablet of dark chocolate
  • 2 eggs
  • 1 box of rectangular cookies
  • Milk (for soaking cookies)
  • Square or rectangular cake mold

Instructions on how to prepare chocolate mousse cake with biscuits.

  1. Prepare the butter and chocolate mixture.
    • Take the butter out of the fridge at least 12 hours before making the cake to ensure it reaches an ointment-like texture.
    • In a saucepan, heat some milk (enough to cover the bottom by a couple of fingers) until it boils. Let it rest for about 5 minutes.
    • Mix the softened butter with the sugar until smooth.
  2. Mix the yolks and chocolate.
    • Separate the egg whites from the yolks. Add the yolks to the butter-sugar mixture and beat until well incorporated.
    • Melt the dark chocolate and add it to the butter and yolk mixture, mixing thoroughly.
  3. Whip the egg whites:
    • Beat the egg whites until stiff using a mixer.
    • Gently fold the egg whites into the chocolate mixture with a circular motion, making sure not to deflate the whites.
  4. Assemble the cake layers.
    • Grease the cake mold with a little butter.
    • Start with a layer of chocolate mousse at the bottom of the mold.
    • Follow with a layer of cookies. Dip each cookie briefly in milk before placing it in the mold.
    • Continue layering mousse and cookies, finishing with a layer of cookies on top.
  5. Chill the cake.
    • Cover the cake with aluminum foil and refrigerate overnight, allowing it to set and firm up.
  6. Unmold the cake.
    • To unmold the cake, run a knife around the edges to loosen it. If needed, gently heat the outside of the mold with a kitchen stove to make unmolding easier without sticking the cake to the pan.
    • Place a serving platter on top of the mold, then flip it over carefully.
  7. Optional decoration.
    • If you have leftover chocolate mousse, spread it on top of the cake for a smooth, glossy finish.
