- 1.5 kg (3.3 lbs) potatoes, peeled and diced
- 1 onion, chopped
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 1 tablespoon smoked paprika (or chorizo for extra flavor)
- 1/2 tsp saffron
- 1/2 liter (2 cups) meat or vegetable broth
- 1 liter (4 cups) water
- 2 garlic cloves, sliced
- Fresh parsley, chopped
- Olive oil
- Salt, to taste

- Prepare the Ingredients:
- Peel the potatoes and cut them into medium-sized cubes.
- Chop the onion and peppers into small pieces.
- Sauté the Vegetables:
- Heat olive oil in a large saucepan over medium heat.
- Add the sliced garlic and sauté for a minute until fragrant.
- Stir in the chopped onion and cook for 2–3 minutes.
- Add the diced red and green peppers and sauté everything for another 8 minutes.
- Add the Potatoes:
- Toss the potato cubes into the pan and sauté for about 5 minutes, stirring occasionally.
- Add Liquids and Seasoning:
- Pour in the broth, water, and a pinch of salt. Mix well.
- Prepare the Saffron Mixture:
- In a mortar, crush the saffron with a small handful of parsley. Add a splash of water to create a flavorful mixture.
- Stir this saffron mixture into the pot with the potatoes.
- Cook the Potatoes:
- Reduce the heat to medium and let the mixture simmer for about 30 minutes. Stir occasionally to prevent sticking.
- The dish is ready when the potatoes are tender and the liquid has thickened slightly into a flavorful sauce.
- Serve:
- Remove from heat and serve the potatoes hot in deep plates, garnished with extra parsley if desired.
