  • 12 quail eggs
  • 12 shortcrust pastry tartlets (store-bought or homemade)
  • 2 chorizos, finely chopped
  • 1/2 onion, finely chopped
  • 1 clove of garlic, minced
  • 1 splash of milk
  • Grated cheese (your choice)
  • Oregano (optional)
  • Olive oil
  • Salt

Steps to Follow

Preparation:

  1. Tartlet Base:
    • If using store-bought tartlets, arrange them on a baking tray.
    • For a personal touch, you can make your own shortcrust pastry tartlets.
  2. Prepare the Filling:
    • Finely chop the onion and garlic.
    • Dice the chorizo into small pieces.
    • Heat a bit of olive oil in a pan, then sauté the onion, garlic, and chorizo over medium heat for about 7 minutes, until softened and fragrant.

Assembly & Baking Options:

Option 1: Fried Egg Topping

  1. Fill the tartlets with the chorizo and onion mixture.
  2. Sprinkle grated cheese over the top.
  3. Bake at 200°C (392°F) for a few minutes until the cheese melts.
