  • 45 g extra virgin olive oil (plus extra for greasing)
  • 5 g dry yeast
  • 10 g salt
  • Fresh rosemary (for topping)

The Preparations of Focaccia Dough Recipe

  1. Activate the Yeast:
    • In a bowl, mix 16 g of sugar with 5 g of dry yeast.
  2. Combine Dry Ingredients:
    • Add the wheat flour to the bowl and stir to combine.
  3. Incorporate Liquids:
    • In a separate glass, mix water and milk. Gradually add this mixture to the dry ingredients while stirring to form a dough.
  4. Knead and Add Oil:
    • Knead the dough for about 5 minutes until uniform. Slowly add the olive oil and continue kneading for another 5 minutes until fully incorporated.
  5. Add Salt and Knead:
    • Transfer the dough to a floured surface, add the salt, and knead for 10-15 minutes. Fold the dough over itself to introduce air and improve its texture.
  6. First Proof:
    • Place the dough in a bowl, cover it with a cotton cloth, and let it rest for about 1 hour, or until it doubles in size.
  7. Prepare the Baking Mold:
    • Grease the base and sides of your baking mold with olive oil.
  8. Shape the Dough:
    • Transfer the dough to the mold. Grease your fingers with olive oil and gently spread the dough to cover the mold, starting from one corner.
  9. Second Proof:
    • Cover the mold with plastic wrap and place it in a turned-off oven to rest for another hour.
  10. Prepare for Baking:
    • Remove the plastic wrap. Use your fingertips to create dimples in the dough. Drizzle olive oil on top and sprinkle with fresh rosemary.
  11. Bake the Focaccia:
    • Preheat the oven to 180°C (356°F) with heat settings for both top and bottom. Place the tray on the lower rack and bake for 30-40 minutes, or until the focaccia is golden.
  12. Cool and Serve:
    • Remove the focaccia from the oven and let it cool slightly before serving.
