How to Prepare Homemade Doughnuts

  • 250 g wheat flour
  • 30 g sugar
  • 25 g butter
  • 12.5 g fresh yeast (or 5 g dry yeast)
  • 75 ml milk
  • 50 ml warm water
  • 1 egg
  • A pinch of salt
  • Olive oil (for frying)

A step-by-step guide on how to make homemade doughnuts.

  1. Prepare the Yeast Mixture:
    • In a glass, combine the warm water and milk. Add the fresh yeast and stir until dissolved.
  2. Mix the Dough:
    • In a large bowl, add the flour, sugar, butter, egg, and salt. Mix the ingredients using electric beaters or a spatula until partially combined.
    • Gradually add the yeast mixture and stir with your hands until a dough forms.
  3. Knead the Dough:
    • Knead the dough in the bowl for about 5 minutes. If it’s sticky, add a little more flour until it pulls cleanly away from the bowl.
    • Transfer the dough to a floured surface and knead until it becomes smooth, elastic, and compact.
  4. First Rise:
    • Place the dough back in the bowl and cover it with plastic wrap or a cotton cloth. Let it rise for at least 2 hours, or until it doubles in size.
  5. Deflate and Knead Again:
    • Remove the dough from the bowl and gently press to release any air. Knead it again on the counter for 2–5 minutes.
  6. Roll Out and Shape:
    • Shape the dough into a ball and roll it out to about 1–2 cm thickness.
    • Use a round cutter to cut out doughnut shapes, and make the inner hole with a bottle cap or small cutter.
  7. Second Rise:
    • Place the doughnuts on a floured surface, cover them with a damp cloth, and let them rest for 30 minutes.
  8. Fry the Donuts:
    • Heat enough olive oil in a deep pan to fully submerge the doughnuts. Maintain medium heat to prevent burning.
    • Fry the doughnuts for 1–2 minutes on each side until golden brown, flipping them with a slotted spoon.
  9. Drain and Cool:
    • Remove the doughnuts from the pan and place them on a plate lined with absorbent paper to drain excess oil.
  10. Serve and Enjoy:
  • Optionally, coat the doughnuts in sugar, glaze, or chocolate for added flavour. Enjoy your freshly made homemade doughnuts.
