- 2 garlic cloves, halved
- 1/2 onion, roughly chopped
- 3 tbsp crushed tomato
- 1 tbsp wheat flour
- 100 ml (1/2 cup) chicken or ham broth
- 1 chili or cayenne pepper, whole or chopped (adjust for heat)
- 1 splash of apple cider vinegar or white wine vinegar
- 1 tablespoon hot paprika (or to taste)
- A few drops of Tabasco (optional, for extra heat)
- Extra virgin olive oil
- Salt, to taste

- Sauté the Garlic and Onion:
- Heat a small pot with a layer of olive oil over medium heat.
- Add the halved garlic, chopped onion, and chili or cayenne pepper. Sauté until fragrant and the onion softens.
- Prepare the Vinegar Mixture:
- In a small glass, mix a splash of vinegar with hot paprika. Set aside.
- Cook the Tomato Base:
- Turn off the heat briefly and stir in the vinegar-paprika mixture to combine with the garlic and onion.
- Turn the heat back to low and add the crushed tomato. Stir well.
- Thicken the Sauce:
- Sprinkle in the flour and stir for 2 minutes to cook out the raw flour taste.
- Gradually add the broth, stirring constantly to create a smooth sauce.
- Simmer:
- Cook the sauce on medium-low heat for about 10 minutes, stirring occasionally, until it thickens slightly.
- Blend the Sauce:
- Remove the pot from heat and transfer the mixture to a blender. Blend until completely smooth.
- Adjust Heat (Optional):
- For extra spice, add a few drops of Tabasco after blending and stir to combine.
