  1. Prepare the Potatoes:
    • Peel the potatoes and cut them into medium-thick slices.
  2. Cook the Potatoes:
    • Place the potato slices in a pot, sprinkle with a pinch of salt, and cover them with water. Ensure the water level is about 1–2 fingers above the potatoes.
    • Bring the pot to a boil over high heat.
    • Once boiling, uncover the pot and let the potatoes cook for an additional 10–15 minutes, or until they are tender.
  3. Drain and Dry:
    • Test the potatoes with a fork to ensure they’re soft. Remove the pot from the heat and drain the water using a strainer.
    • Return the drained potatoes to the pot and place them back on the stove over very low heat for a couple of minutes to remove excess moisture.
  4. Heat the Milk:
    • While the potatoes are cooking, heat the milk in the microwave or on the stove. It’s important that the milk is very hot to keep the potatoes warm during preparation.
  5. Mash and Mix:
    • Remove the pot of potatoes from the heat. Add a generous splash of olive oil and the hot milk.
    • Mash the potatoes using a fork, spoon, or potato masher. Alternatively, pass them through a food mill for a smoother texture.
    • Adjust the salt, olive oil, and milk to achieve your desired taste and consistency.
