Rice Three Delights Recipe: Fried Rice

The Ingredients Needed.

  • 300g long white rice
  • 250g peeled prawns
  • 80g peas (frozen or fresh)
  • 1 small can of corn
  • 1 carrot
  • 4 slices of York ham
  • 2 eggs
  • Olive oil
  • Salt (to taste)

Instructions on how to prepare three delicious rice dishes.

  1. Cook the Rice:
    • Start by cooking the rice as you normally would. Once cooked, set it aside to cool slightly.
  2. Boil the Peas:
    • If using frozen peas, boil them until tender. Drain and set aside.
  3. Prepare the Vegetables & Ham:
    • In a frying pan, heat a drizzle of olive oil over medium heat.
    • While the pan is heating, chop or grate the carrot.
    • Once the oil is hot, add the carrot and cook until softened. Then add the peas and York ham, and sauté for another 2-3 minutes. Lower the heat and allow everything to cook together.
  4. Prepare the Eggs:
    • In a separate bowl, beat the two eggs as if making a French omelette.
    • Scramble the eggs in a lightly oiled pan over low heat, then set them aside.
  5. Cook the Prawns:
    • In the same pan, add the prawns and cook until they are almost done, turning them as needed to ensure even cooking.
  6. Combine Everything:
    • Add the cooked rice to the pan with the prawns, stirring gently to mix everything together for about 2 minutes.
    • Next, add the sautéed carrot, peas, York ham, and scrambled eggs into the pan. Mix well.
  7. Finish and Serve:
    • Transfer the rice mixture to a serving dish. Just before serving, add the drained corn and mix gently.

Tips:

  • For added flavor, you can season with a pinch of black pepper or a drizzle of soy sauce.
  • This dish is perfect as a main course or as a side to grilled meats.
