Tomato Caprese Soup accompanied by Mozzarella
Ingredients:
- 1.5 kg ripe tomatoes
- 3 garlic cloves
- 2 mozzarellas (fresh)
- Fresh basil (4β5 leaves, plus extra for garnish)
- Ground black pepper (to taste)
- Salt (to taste)
- Extra virgin olive oil

- Infuse the Oil:
- Cover the bottom of a large pot with a generous drizzle of extra virgin olive oil.
- Add the garlic cloves, cut in half, to the oil. Heat gently to infuse the oil with garlic flavour.

- While the garlic infuses, roughly chop the tomatoes.
- Cook the Base:
- When the garlic begins to sizzle and turn golden, add the chopped tomatoes (along with their juices) to the pot.
- Add 4β5 fresh basil leaves, season with salt and ground black pepper, and stir.
- Simmer the Soup:
- Reduce the heat to low and cover the pot. Let the soup simmer for 30 minutes, allowing the flavours to meld together.
- Blend the Soup:
- Remove the pot from heat and blend the tomato mixture using an immersion blender or a countertop blender until smooth.
- If the soup is too thick, add a little water and blend again until you achieve your desired consistency.
- Cool the Soup:
- Allow the soup to cool slightly, serving it warm or at room temperature for the best flavour.
- Plate and Garnish:
- Pour the soup into bowls or deep plates. Tear the fresh mozzarella into chunks and place it on top of the soup. Garnish with additional fresh basil leaves and a drizzle of olive oil.
