  • 1.5 kg ripe tomatoes
  • 3 garlic cloves
  • 2 mozzarellas (fresh)
  • Fresh basil (4–5 leaves, plus extra for garnish)
  • Ground black pepper (to taste)
  • Salt (to taste)
  • Extra virgin olive oil

  1. Infuse the Oil:
    • Cover the bottom of a large pot with a generous drizzle of extra virgin olive oil.
    • Add the garlic cloves, cut in half, to the oil. Heat gently to infuse the oil with garlic flavour.

    • While the garlic infuses, roughly chop the tomatoes.
  3. Cook the Base:
    • When the garlic begins to sizzle and turn golden, add the chopped tomatoes (along with their juices) to the pot.
    • Add 4–5 fresh basil leaves, season with salt and ground black pepper, and stir.
  4. Simmer the Soup:
    • Reduce the heat to low and cover the pot. Let the soup simmer for 30 minutes, allowing the flavours to meld together.
  5. Blend the Soup:
    • Remove the pot from heat and blend the tomato mixture using an immersion blender or a countertop blender until smooth.
    • If the soup is too thick, add a little water and blend again until you achieve your desired consistency.
  6. Cool the Soup:
    • Allow the soup to cool slightly, serving it warm or at room temperature for the best flavour.
  7. Plate and Garnish:
    • Pour the soup into bowls or deep plates. Tear the fresh mozzarella into chunks and place it on top of the soup. Garnish with additional fresh basil leaves and a drizzle of olive oil.
